2-1 PRO SERIES ELECTRIC FRYERS CHAPTER 2: INSTALLATION INSTRUCTIONS 2.1 General Proper installation is essential for the safe, effici ent, trouble-free op eration of this appliance. Any unauthorized alteration of this e quipment w ill void the Frymaster w arranty.
2-2 DANGER Do not attach an apron drainboard to a si ngle fryer. The fryer may become unstable, tip over, and cause injury. The applian ce area must be kept free and clear of combustible material at all times.
2-3 NOTICE If this appliance is permanent ly connected to fixed wiring, it must be connected by means of copper wires having a temperatur e rating of not less than 167°F (75°C). DANGER This appliance must be connected to a po wer supply having the same voltage and phase as specified on the rating plate located on the inside of the appliance door.
2-4 NOTE : If you need to relocate a fryer installe d with legs, rem ove all weight from each leg before moving. If a leg becomes damaged, contact your service agent for immediate repair or replacement. DANGER Hot shortening can cause severe burns. Avoi d contact.
3–1 PRO SERIES ELECTRIC FRYERS CHAPTER 3: OPER A TING INS TRUCTI ONS 3.1 Equipment Setup and Shutdo wn Procedures Setup DA NGER Never operate the applian ce with an empty fry pot. The frypot must be f illed with water or cooking oil/shorteni ng before energ izing the elements.
3–2 Shutdo wn 1. Turn the fr yer off. 2. Filter the cooking oil/shortening and cl ean the fr yers (See Chapters 4 and 5). 3. Place the fr ypot covers on the fr ypots.
3–3 CA UTION If this is the first time the fryer is being used after installation, refer to the frypot Boil-Out Procedure on Page 5-2. Refer to th e separat e Frymaster Fr yer Controllers User’s Manual furnis hed with your fr yer for the specific c ontroller operating instructions.
4-1 PRO SERIES ELECTRIC FRYERS CHAPTER 4: FILTR ATION INSTRUCTI ONS WARNING The on-site supervisor is r esponsible for ensuring that operators are made a w are of the inherent hazards of operating a hot oil filtering sy stem, particularly the aspects of oil filtration, draining and cleaning procedures.
4-2 3. Open the drain valve slowl y to avoid splattering . If the drain valve becom es clogged with food particles, use the Fr y er’s Friend (poker-like tool) to clear th e blockage. DA NGER NEVER attempt to clear a clogged drain valv e from the front of the valve! Hot oil or shortening will rush out creating the potentia l for severe burns.
4-3 4.2.1 Prepar ation for Use with Filt er Paper or Filt er Pad 1. Pull the filter pa n out from the cabinet and remove the crumb tra y, hold-down ring, filte r paper and filter s creen. (See Figure 1) Cle an all components with a solution of detergent and hot wat er, then dry thoroughly.
4-4 5. When the hold-down ring is in position, if using filter paper, sprinkle one cup of filter powder evenly over the paper. (See Figure 4) If using a filte r pad, position the hold down ring on top of the pad. DO NOT use filter powder with the pad.
4-5 4. Replace the Magnasol filter assembl y in the filter pan, ensuring that the fitting on the bottom of the assembly is securel y seate d in the port in the bottom of the pan. Sprinkle one cup of th e Magnasol XL filte r powder evenl y over the screen.
4-6 2. Install the Power Shower by removing the basket support rack from the fr ypot. Raise th e element ass embly to the up position and snap the power shower attachme nt into position NOTE: Verify that the Powe r Shower O-ring and gasket are present and in good condition and that the clean-out screws are installed at each corner.
4-7 WARNING The filter pump i s equipped with a manual res et switch in case t he filter moto r overheats or an elect rical f a ult occurs. If this s w itch trip s, turn off power to the f ilter system and allo w the pump motor to cool 20 minutes b efore attempting to reset the switch (see photo below).
4-8 4.4 Disassembly and Reassembly of t he Magnasol Filter Dissassembly 1. Grasp the frame with your thumbs on the handles at t he corner of th e assembl y and pul l outward in opposite directions to separate the frame at the corner.

Clean-out Plugs Gasket DA NGER Failure to reinstal l the clean-out pl ugs in the Power Sho w er will cause hot oil/shortening to spray out of the frypot during the f iltering process, creat ing an extreme burn hazard to personnel .
5-3 4. Simmer the solution for 45 minutes to one hour. Do not allow the water level to drop below the bottom oil-level line in the fry pot during the boil-out operation. NOTE: For units with thermostat contr ollers, you must turn the f rye r on and off periodicall y during this process to prevent the frypot from boiling ov er.

6-3 Problem Probable Cau ses Corrective A ction Fryer repeat edl y cycles on and off when first started. Fryer is in me lt-cycle mode . This is normal for fryers equipped with CM III computers, Basket Lift Timers, and Digital Controllers .
6-4 Problem Probable Causes Corrective A ction Fryer heats until high limit t rips withou t heat indi cator ON. Contactor or controller has failed. Call FASC. Fryer stops heating with heat indicator ON. The high limit the rmostat or contactor has failed.
6-5 Problem Probable Cau ses Corrective A ction CM III display shows . Fryer is more than 21ºF (12ºC) above setpoint. This display is normal if the f ryer setpoint has been chan ged to a lower temperature . The display should revert to the normal four dashes when the fr ypot temperature cools to the setpoint.
6-6 Problem Probable Cau ses Corrective A ction Digital contr oller display is in wrong temperatu re scale (Fahrenheit or Celsius). Incorrect displa y option selected. Digital c ontrollers are ma nually se t to display in one temperature scale or the other.
