11 BAKEWARE T o cook food evenly , hot air must be ab le to circul ate. Allow 2 in. (5 cm) of space a round bakeware and oven walls. Use t he following chart as a guid e. Bakeware The bakeware mat erial affects cooking r esults. Follow manufacturer’ s recommendations and use t he bakeware size recommended in the recipe.
12 Baking and Roasting Before baking an d roasting, posit ion racks according to the “Position ing Racks and B akeware” section. When roasting, it is not necessary to wait for the ov en preheat condition ing time to end before puttin g food in unless recommended in the recipe.
