3 Getting to Know Y our Oven Model Identification The oven is a vailable in single and double oven • models. Both models are equipped with Dacor’s Pure Con vec- • tion cooking system (see page 13 for description). On double oven models, only the upper o ven is equipped for convection cooking.

6 Getting to Know Y our Oven A START key When you use the v arious features (or modes) on your oven, select the cook - ing mode rst, then press the START key . Also , use the START key to start the timers. B Mode keypad Select the type of cooking you w ant to perform by pressing one of the cooking mode keys.

8 Control Panel Settings Setting the T ime Press the 1. CLOCK key . The colon between the minutes and seconds on the time display will begin to ash. Enter the current time on the number keypad before 2. the colon stops ashing. F or example: For 12:08, press 1-2-0-8 on the keypad.
9 Inser ting the Optional GlideRack ™ Oven Rack Y ou can pull the GlideR ack oven rack out further than standard oven r acks and still support heavy pots and pans full of food. It is great for heavier foods and the optional Dacor baking stone. Hold the GlideRack o ven rack with the guides fully 1.

11 Operating Y our Oven Lock-Out Feature If you want to disable the keys on the control panel when the oven is not in use: Push and hold the • CANCEL · SECURE key for about three seconds. The control panel keys will stop work - ing and “ OFF ” will appear on the display .
12 Common Problems When Using the Bake Mode Problem May be caused by What to do Cookies burn on the bottom. Oven door opened too often. Set timer to shortest recommended cooking time and check food when timer beeps. Use door window to check food. Incorrect rack position used.
13 Operating Y our Oven Y our oven offers three convection cooking modes: Pure Convection • Convection bake • Convection roast • As a general rule, in the con vection modes time is about 25% shorter . Set the timer 15 minutes before the shortest stated time and add more time if necessary .
14 Operating Y our Oven Convection Roast Y our ov en’s con vection roast mode uses a combination of the convection fan and heat sources abo ve and below the food. It is best for rib roasts, turkeys, chick ens, etc. Roasting T ips All baking modes can be used to successfully roast in • your ov en.
15 Operating Y our Oven T imers w arning The timers on your oven do not turn the oven on or off . They are only for timing purposes. When you want to turn the oven off automatically , use the Delay Timed Cooking Features . import ant Pressing the CANCEL · SECURE key does NOT reset or stop the timers.
16 Operating Y our Oven About Hold Mode... When you set the ov en to stop cooking using the • DURATION or STOP TIME keys, it will go into “hold” mode ( HLd appears on the display) when it reaches the end of the cook time you hav e set. The oven will k eep the temperature at 150°F for two hours.
17 Operating Y our Oven Meat Probe Instructions Prepare the meat for cooking prior to setting the 1. oven. Insert the meat probe sk ewer into the center of the meat. Make sure that the sk ewer is not inside any fatty portions of the meat and does not touch an y bones.

20 Operating Y our Oven Proofing Y ou can use y our oven to proof yeasted doughs at a low and draft -free temperature using the Bake mode. Press the 1. BAKE key*. Enter the temperature of 100°F on the k eypad. 2. Press 3. START . Place the dough in a greased bowl inside of the oven.
21 Operating Y our Oven Cooking T ips Food Placement F or best results when baking on two racks, use rack • positions #2 and #4 or #1 and #3 with the oven set to Pure Convection or con vection bake mode. F or best results when baking on three racks, use r ack positions #1, #3 and #5 with the oven set to Pure Con vection mode.
22 The Best Use of Bake W are Y ou should bak e cakes, quick breads, mufns and • cookies in shiny , reective pans for light, golden crusts. A void old, darkened, warped, dented, stainless steel and tin-coated pans. They heat unevenly and will not give good baking results.
23 w arning Clean only the parts of the oven listed in this manual. • Clean them only in the manner specified. T o avoid dangerous fumes or damage to your oven’ s • surfaces and accessories, use only the types of cleaning solutions specified in this manual.
24 Care and Cleaning Self Clean (Cont.) After the self clean cycle is complete: The door latch will release when the inside has cooled • down. The clean icon, lock icon and “ ON ” will disap- pear from the display . Exercise caution because the oven will still be hot (about 400°F) at the time the door lock is released.
25 Door Gasket (Seal) w arning T ake extreme caution when cleaning the door gasket. Rubbing or displacing it may damage the tight door seal required for proper cooking and self cleaning. Clean the door gasket by dabbing it with a solution of water and mild soap.
26 Optional Roast/Broil Pan with “V” Shaped Rack Y our roast/broil pan has a porcelain enamel nish. When you clean it, use a solution of detergent and hot w ater . If your roast/broil pan is heavily soiled, use a scouring pad and plenty of water .
27 w arning T o prevent electrical shock and/or personal injury , make • certain that the oven and the light bulb are cool and that power to the oven has been turned off at the circuit breaker panel or fuse box before replacing a light bulb. Always make sure the lens cover is in place when • using the oven.
