BEFORE USING Y OUR APPLIANCE 1. Remo ve all packaging materials and labels from y our appliance. If the installer has not set up your appliance, do it now .
COOKT OP USE Y our new professional gas range or cooktop is equipped with burners typical of those used in restaurants. These burners are designed in two pieces for maximum cleanability and con- trollability . The center , smaller cap covers and protects the simmer burner from boil ov ers, that could put the flame out.
COOKT OP USE flame it will not relight automatically as the outer burner would. If a burner does not ignite, listen for the clicking sound. If the igniter is not clicking, TURN OFF THE BURNER. Check the circuit breaker for a blo wn fuse or a tripped circuit breaker .
COOKT OP USE •F or safety reasons the flame must never extend beyond the bottom of the cooking utensil. N ever allow flames to curl up the side of the pan. •U tensils which conduct heat slowly (such as glass- ceramic) should be used with medium to low flames.
GRILL USE The two-piece grill rack is reversible. Place the side with the two groov ed tabs towards the back of the cooktop. The grill rack is made of cast iron and has a black porcelain finish. O ne side of the grill is ridged and should be used for foods where you want the fat to run off, such as steak or ham- burger patties.
GRILL USE They should be cleaned each time they are used. O ccasionally grease drippings ignite. These drippings will create minor puffs of flame for a second or two . This is normal when cooking on a barbecue. Y ou may find it handy to have a spray bottle filled with water to lightly spray the flare-up .
GRIDDLE USE The built-in griddle on your cooktop is made from T ype 304 stainless steel, highly polished to provide a smooth cooking surface. It is normal for it to darken with use as oils cook onto the surface to provide a stick resistant base or “ seasoning”.

P reheat griddle for 15 minutes with the control knob set to the temperature suggested on the cooking chart.
O VEN USE Y our new professional Dual F uel range is equipped with bake and broil cooking elements. The 27” ov en bakes at 6,000 W atts while the 27” and 24” oven broils at 4,000 W atts. On the (RD 304 models) the 24” o ven bakes at 3,000 watts.
O VEN USE Converting Recipes to Convection B aking Low sided baking utensils will give the best r esults as th e hot air can reach all sides of the food easier . The oven tem- perature can be left the same as the recipe and the food cooked a shorter period of time.
O VEN USE Pr eheating takes about 10 to 15 minutes depending on the temperature set. P reheating is usually necessary for foods baked at high temperature for a short period of time, i.e. drop cookies. The ov en heating light will turn off when the oven has r eached temperature.
O VEN USE The larger 27" self cleaning convection ov en is locat- ed on the right side of a 48" Dual F uel Range or is the only oven on a 36" and 30" Range. The oven comes standard with (3) o ven racks and three posi- tion roller assisted rack supports.
O VEN USE When the "Broil" selector button is pr essed you will hear a cooling fan begin to operate and feel an air current abo ve the oven door . This air current serves to keep the control area abo ve the oven cooler during open door broiling.
O VEN USE The rack position depends on the type and thickness of the food. Thick pieces of meat or poultry would typically be broiled on rack position 2, steaks, chops and hamburger , would be broiled on rack position 1. If top browning casser oles or bread the thickness of the food would indicate the rack position.

27” & 24” O VEN SELF-CLEANING W ipe off any smoke residue that r emains on the front frame with F ormula 409® and F antastik®. If stain r emains, use a mild liquid cleanser . The amount of smoke stain is directly related to the amount of food soil left in the oven at the time of self-cleaning.

CARE and MAINTENANCE When cleaning this range: Be careful cleaning any part of this appliance particularly the griddle or the grill while hot. A ll parts of the appliance (except the stainless steel griddle) can be cleaned with hot soapy water , rinsed, dried and buffed to a shine with a soft, heavy pile cloth.
CARE and MAINTENANCE W ipe with a water dampened cotton swab . Be careful not to damage the igniter . (See illustration above and page 9. The burner bowls, around the burners, ar e easily lifted off when the burner grates are remo ved. They are porcelain enameled steel.
CARE and MAINTENANCE If hot soapy water , vinegar , scouring powder , steel wool or metal scouring pads are used to clean the griddle, it must be r eseasoned . F ollow the directions on page 14 to reseason the griddle. Clean the grill immediately after cooking.
CARE and MAINTENANCE If the rear top burners are used extensiv ely on high it is possible for the vertical stainless steel panel of the low back or high shelf to discolor from the burner heat. This discol- oration can be remo ved by using Revere W are Stainless S teel Cleaner .
CARE and MAINTENANCE cleaners cause darkening and discoloration. T est the cleaner on a small part of the rack and check for any discoloration before cleaning the entire rack. A pply a generous coating. Allow to stand for 15 to 20 minutes. Rinse thoroughly and dry .
W ARRANTY This warranty applies to appliances used in residential applica- tions; it does not cover their use in commercial situations. This warranty is for products purchased and retained in the 50 states of the U.S.A., the District of Columbia and Canada.
